I am constantly asked for information on social media about different dishes and diets to lose weight. If you are looking for something different to try, here I bring you two delicious options from international cuisine. If you are taking care of your diet and want to have a healthy diet, remember that you can eat a little of everything, just be careful to moderate yourself and exercise regularly to ward off excess weight.

Riojana style potatoes

This dish reflects the tradition of rustic cuisine with a particular character. A cuisine that was born in the valleys of the Community of La Rioja. Its main protagonist is chorizo; typical sausage that concentrates all that mixture of strong and forceful flavors; as well as the excellent wines that evoke Logroño (capital of the autonomous community), its villages and the passage of the Ebro River. Ingredients:

  • 1 Riojan chorizo
  • 3 Cloves of Garlic
  • 1 Onion
  • 1 Bell Pepper (indistinct color)
  • 3 Tablespoons of olive oil INSTRUCTIONS:
  • The potatoes should be peeled and cut into irregular cubes, providing texture to the presentation of the dish.
  • The garlic is divided in the center, eliminating the stems and centers.
  • Put 3 tablespoons of olive oil in a saucepan and wait for it to heat up. Sauté the onion and peppers until they release aroma into the air.
  • Cut the chorizos into pieces, it is suggested to cut them into medium slices and in turn cut them into quarters, incorporating them into the sauce.
  • Add half a cup of water and allow it to boil over high heat.
  • Once boiling, wait for it to take on a little flavor and the characteristic reddish color of the sausage. Cover and let it cook over low heat. Let the cooking not evaporate the broth, since it is delicious to accompany it with bread, these two textures give that authentic touch of La Rioja, leaving the potatoes very soft, without becoming puree. Serve preferably in concave clay pots. The perfect formula is complemented with a red Grenache to enhance and delight perfect for lunch

Coconut Panna Cotta

A fresh and simple option for these hot days, with a subtle flavor and soft consistency. This dessert is ideal to close a good table with a pleasant chat and tea. Ingredients 150 g half light cream 100 mm light milk 20 g grated coconut 25 g white sugar 1 sachet of unflavored gelatin 7g *fresh raspberries Preparation 1- Hydrate the gelatin with cold water (1/4 cup) until solidification 2-Heat the milk and cream over very low heat until it comes to a boil, stirring constantly. 3-Add the grated coconut and gelatin, integrating the mixture until dissolved. 4-Pour the mixture into molds, refrigerate for 3 hours and serve. 5-Unmold on a plate. *Suggestion: Decorate with fresh raspberries dusted with powdered sugar and a few mint leaves. Remember that moderation is the key, on your rest day you can prepare some of these recipes, just don’t overdo it so that your weight loss is effective without neglecting health and nutrition.
