Baked tomato with egg
Not only is it delicious, this recipe will help you on your way to losing weight and the best thing is that its ingredients are easy to find.
Tasty baked tomato is a very healthy way to start the day. And it is rich in proteins and vitamins. 🍅 If you prefer, you can use a large Portobello or even red peppers instead of the tomato. 🤓 * Serves: 2 Calories: 200kcals Suitable for those on step 2 and above on the CWP diet.
Ingredients
4 large tomatoes. 🍅 4 small eggs. 🥚 Chives, chopped. 🔪 200g canned chopped tomato. Italian herbs. Spray oil. Salt and black pepper. 👌 *
Instructions
- Preheat the oven to 180°C. 🔥
- Cut the top off each tomato to use as a “lid.”
- Using a teaspoon, scoop out the inside of the tomatoes, including the seeds, and set aside.
- Season the tomatoes with salt and pepper. 👌
- Carefully break an egg into each picked tomato and sprinkle with the chive pieces. 🤓
- Place the tomato pulp and seeds plus the canned tomatoes in a shallow baking tray and place the stuffed tomatoes on top. 😉
- Cover with the lids at an irregular angle (without covering the eggs inside) and drizzle lightly with oil.
- Bake for about 15 minutes, until the tomatoes are soft and the eggs are set.
- Serve immediately, sprinkled with more pieces of chives. Enjoy!
