CWP Recipe: Avocado Pesto Pasta

For the pesto:• 25 g of spinach.• 2 avocados.• 3 tablespoons of lemon juice.• 1 clove of **garlic crushed.• 50 g of basil leaves.• 50 g of toasted pine nuts.• 3 tablespoons of **olive oil.• 25 g of grated Parmesan cheese.
**Method:1. Cook the pasta. Then drain to separate the cooking water.2. Meanwhile, make the pesto. Boil the spinach leaves by pouring boiling water over a bowl and stirring well. Drain and squeeze.
**3. Place the avocados in a blender and add the spinach, lemon juice, garlic, basil and pine nuts. Blend until smooth, slowly add the oil and blend again. Finally, add the grated Parmesan cheese.
