CWP Recipe: Lemon Chicken with Cauliflower Rice

This lemon chicken recipe is perfect to eat at lunch time. Cauliflower "rice" is really healthy, they contain very few calories

Cauliflower “rice” is really healthy, it contains very few calories and carbohydrates compared to regular rice and is the perfect accompaniment to this lemon chicken. For 4 people. Calories: 200kcals. Suitable for those on step 2 on the CWP diet.

The ingredients:

4 x 125g boneless, skinless chicken breasts. Spray oil. 3 cloves of garlic crushed 3 tablespoons of capers. Zest and juice of 1 lemon. 1 lemon in slices. 300 ml of broth of chicken. a handful of chopped parsley. Salt and pepper. Lettuce To Serve. *

For the cauliflower rice:

1 cauliflower small cut into thin strips. Spray oil. A pinch of dried chili flakes

Instructions:

  1. Cut each chicken breast in the middle, so that it opens like a book. Place them between 2 sheets of baking parchment and flatten them with a rolling pin.
  2. Spray Lightly oil a large frying pan and place over medium heat. Add the chicken and cook for 4-5 minutes per side until golden and cooked through. 3.-Remove the breast to a plate, cover with kitchen paper and keep warm. Add the garlic to the pan and cook for 1 minute without browning. 4.- Add the capers, lemon zest and juice, lemon slices and broth chicken. 5.-Raise the fire and let it bubble for about 5 minutes until it is slightly reduced and thicken Put the cooked chicken back in the pan and add the parsley. Season to taste.

6.-Put the cauliflower in a food processor until it resembles “rice” grains. Spray Lightly oil a frying pan and place over medium heat. Add the chili and cauliflower and cook for 3 minutes. 7.
