The ingredients

• 2 handfuls of bitter vegetables (arugula, dandelion and endive)* • 1 carrot, grated.** • 1 cucumber, diced.** • 1/2 red onion, finely chopped.** • 1 radish.** • 1 medium tomato, sliced.

Dressing

• 1 lemon juiced.* • 1 avocado.** • 1 tablespoon apple cider vinegar. • Cayenne pepper.** • 1 teaspoon natural honey.** • 1 handful of fresh, mild herbs (works best with dill, cilantro or basil)** • 1/4 teaspoon sea salt.

Method to prepare it*

  1. To make the dressing, add the lemon juice, avocado, cayenne pepper, vinegar, honey, herbs and salt to the blender.** 2. Blend until smooth. You may need to add a splash of water to make mixing easier.** 3. Adjust the seasoning to taste.** 4. In a large bowl, place the leaves, cucumber, carrot, radish, onion and tomato.** 5. Spread dressing generously over your salad. Mix well before eating.
