Ingredients

You will need the following ingredients:

  • 2 cans of tuna in water
  • Celery cut into cubes (to taste)
  • 2 pieces of apple, peeled and cut into cubes
  • 2 potatoes previously cooked and cut into cubes
  • ¾ cup homemade mayonnaise
  • 100 grams of elbow pasta #2
  • Salt and pepper to taste
  • Jalapeno pepper to taste
  • 1 egg
  • 2 lemons
  • 1 teaspoon Dijon mustard
  • ¾ cup olive oil
  • 1 pinch of salt
  • 1 teaspoon of sugar
  • Onion
  • Enough Perón tomato or avocado
  • 1 piece of dried apricot lettuce
  • Salty crackers

Preparation

This recipe requires several ingredients, but don’t worry, you won’t get complicated if you follow this procedure:

  • In a pot with boiling water, put the elbow pasta along with a little olive oil, a pinch of salt and a piece of onion and cook the pasta very well.
  • While the pasta is cooking, we will make the mayonnaise. Start by beating the egg, then place it in a blender along with salt and sugar, add half of the olive oil and then the juice of the two lemons and continue beating. Then add the rest of the olive oil until you have the desired consistency and at the end add the teaspoon of mustard to give it a special touch.
  • When the pasta is already cooked and your mayonnaise is made, complement it with the drained tuna, the cooked potato cubes, the peeled apple cubes and the chopped celery in a medium-sized container. Add salt and pepper to give it that last touch. Finally add jalapeno chili.
  • Serve on a bed of lettuce and place the salad on the bed, or serve inside the perón tomato or avocado and accompany with the crackers. If you can’t find elbow pasta, you can use some other type of pasta without a problem, as long as it isn’t the spaghetti that we all know. This delicious salad will give you those nutrients from the fatty acids and omega 3 that tuna contains, along with the nutrients from pasta, and fruits like apple, you can ensure that you have a very balanced meal that will leave you satisfied and, above all, very low in calories. Don’t worry about your homemade mayonnaise, it is even more nutritious than commercial mayonnaise, since you have used a different process than the one that will be used in factories.
