Fall Vegetable Soup (serves 6)

The soup fall vegetables is an easy and healthy vegetarian recipe with pumpkin, cabbage curly and white beans. 🤓

Ingredients

• 1 tablespoon of extra virgin olive oil. 🥄 • 2 leeks medium, light green and white parts only, cut in half and sliced. 🔪 • 1 carrot big slice. 🥕 • 4 teeth chopped garlic. • 1 cup of pumpkin cut into 2 cm cubes. • 4 cups of low sodium vegetable broth. 💪 • 1 can of diced tomatoes. 🍅 • 1 sheet of laurel. • 1 teaspoon of dried thyme. • 1 teaspoon of dried rosemary. • 1 can of white beans, rinsed and drained. 🙌 • 1 bunch of cabbage chopped curly. • salt and pepper. • parmesan cheese grated, to serve (optional). 🧀

Instructions

1.-Preheat the oil in a large pot. Add the leeks and carrot and stir for 5 minutes or until softened. 🧐 2.-Add the garlic and the pumpkin and stir for approximately 1 minute. 3.-Add the broth, diced tomatoes, bay leaf, thyme and rosemary and stir. 🤗 4.- Leads to boil and reduce heat to simmer. Add the beans and continue. simmering for about 15 minutes or until the vegetables are tender. tender 🔥 * 5.-Add the cabbage curly and cook over low heat for about 5 minutes.
