How to prepare corn soup

We share with you a delicious easy-to-prepare corn soup recipe.

During the month of February, every Friday we will bring you delicious and new recipes so you can enjoy their flavors. To prepare our corn soup you will need: INGREDIENTS: 1-2 cloves of garlic ¼ stalk of garlic cloves (leeks) ½ fresh chili to your liking 6 tablespoons of olive oil 450 gr. of fresh, frozen or canned corn 1 tablespoon of curry ½ tablespoon of turmeric (optional, to intensify the color) ½ liter of chicken or vegetable broth 50 ml. of liquid cooking cream 50 ml. of coconut cream the juice of ½ lemon salt to your taste fresh cilantro to decorate PREPARATION: Finely cut the garlic cloves and the chili. Add olive oil to the bottom of a pot and when it is hot, add the garlic and chili, and brown them until they are translucent. Add the corn and let it cook for about 5 minutes. Extract and set aside about 6 tablespoons of corn kernels. Add broth to cover the corn, the liquid cream, the coconut cream, the lemon juice or juice, the curry, the salt and let it boil for about 5 minutes. After time, transfer the soup to a mixer or blender and blend until you obtain a not very thick cream. If the consistency of the soup is too thick, add more broth. Taste the seasoning and if necessary add salt. If it is a little spicy, add a pinch of sugar to reduce the spiciness. Serve in deep plates and decorate with corn kernels and fresh cilantro.
