Makes 2 servings Prep 10 min Fat 0.6 g Fiber 3.7 g Salt 0.01 g low GI INGREDIENTS 250g natural yogurt 0% Fat 3 teaspoons lemon cream ½ cup light whipped cream. 100g of raspberries. 1 ripe peach, pitted and cut into cubes Zest of 1 lemon. HOW TO PREPARE A third of a spoon of the natural yogurt in two tall glasses or ice cream dishes. Sprinkle a teaspoon of lemon curd. Top with half the light whipped cream, a few raspberries and the chopped peach, then top with half the remaining yogurt and a teaspoon of lemon curd. Add the remaining crumbled meringue and fruit, reserving a few raspberries for garnish, then top with the rest of the yogurt. Sprinkle in the last tablespoon of lemon curd. Sprinkle with the grated lemon zest and decorate with the reserved raspberries. Serve immediately or cover with some plastic wrap and chill in the refrigerator until use. VARIATION You can use any seasonal fruit in this dessert. Instead of raspberries and currants, try sliced blueberries or strawberries. Instead of layering the ingredients in a glass or plate, you could make a meringue nest with the yogurt, lemon curd, and fruit. This will add 17kcal per serving.
