Ingredients

·2 medium boneless chicken breasts* ·1 tablespoon olive oil** ·1 teaspoon Italian seasoning** ·½ cup green apple, cut into small cubes** ·1 cup purple grapes, sliced** ·1 cup celery, sliced** ·¼ cup almonds, chopped* ·¼ cup light mayonnaise** ·Pinch of salt and pepper

Preparation

  1. Preheat the oven to 180°C.
  2. Coat the chicken with olive oil and Italian seasoning, then place in a glass baking dish. Place in the oven for 20 minutes and then flip for another 15 minutes.
  3. Once the chicken is cooked and cooled, cut it into small pieces, into cubes. *4. In a large bowl, add the chicken and all other ingredients.
