This recipe makes 14 4-inch pancakes.** Calories per serving: 162 Ingredients: 3 cups almond flour 1 tablespoon ground flax seeds* 1/2 teaspoon sea salt* 1/2 teaspoon baking soda * sodium* 3 large eggs* 3/4 cup unsweetened almond milk, coconut milk or milk* *2 tablespoons extra-light olive oil, walnut oil, coconut oil or melted butter.
Preparation:
1. In a medium bowl, combine almond flour, flaxseed, salt, and baking soda. 2. In a large bowl, beat the eggs, then add the milk and oil or butter and beat well. 3. Gradually fold the flour mixture into the egg mixture. Add more milk as needed, a tablespoon at a time, to reach pancake consistency. 4. Lightly grease a frying pan and heat over medium heat. *Pour 1/4 cup of batter into the pan. Cook for three minutes or until bubbles form and the edges are cooked. Flip and cook for three minutes or until the bottom is lightly browned. Repeat with the remaining dough. 5. Serve with desired ingredients.
