Ingredients 125g penne or orecchiette pasta 300g purple broccoli A shot of cooking spray 2 cloves garlic, sliced 1/4 teaspoon dried chili flakes 2 teaspoons pine nuts 60g sundried tomatoes (not in oil) Freshly ground black pepper 2 tablespoons chopped flat-leaf parsley Preparation Cook the pasta in a large pot with water boiling. When they are al dente, drain well. Meanwhile, cook the broccoli in boiling water for 5 minutes. Drain and refresh them with cold water, and set them aside. Lightly spray a non-stick frying pan with oil over low heat. When hot, add the garlic and chili flakes and cook for a further 1-2 minutes. Add the broccoli, pine nuts and sundried tomatoes and cook, stirring occasionally, for 4 minutes. Add the cooked pasta and mix gently. Season with black pepper, sprinkle with parsley and serve immediately. Variation If you are not a vegetarian, do as the Italians do and add 6 drained anchovy fillets. This adds. 21kcal per serving. It will still be a low calorie pasta. This recipe also works well if you use 150g cauliflower and 150g broccoli instead of purple broccoli. To make this dish more complete, add a drained can of tuna in water. This adds 40 kcal per serving in step 3. If you want to eat this pasta dish in step 4, simply omit the sun-dried tomato and use 40 g cherry tomatoes cut in half in a cool place and reduce the pine nuts in a single teaspoon.
