Prepare these delicious mango cupcakes!

Mango cupcakes are one of my favorite desserts. I love mangoes! and I do a lot of preparations with them. Since I was a child, my mother bought mangoes and prepared them for me in many ways. In salads, desserts, smoothies and as a snack. Yesterday I invited her to lunch and I made her some mango cupcakes. They were so delicious that today I want to share my recipe with you too. Ingredients: • 1 cup of mango puree • 2 cups of whole wheat flour • 2 eggs • ½ cup of milk • A little baking soda (1/2 teaspoon) • ½ cup of vegetable oil • 1 tsp of baking powder Preparation of mango cupcakes:

  1. Preheat the oven to 180ºC.
  2. Spray a 9-cupcake pan with baking spray or brush with a little oil and sift in a little flour.
  3. Crack the eggs into a bowl and beat until soft peaks form.
  4. In another bowl, sift the flour with the baking soda and baking powder.
  5. Add the mango puree and oil. Mix them well. By now, you should have something resembling a dough.
  6. Add the milk little by little, mixing the dough to know how much milk to add. You can adjust the consistency of the dough by adding more milk.
  7. You can add, if you wish, mango pieces or chocolate chips.
  8. Fill the tray molds ¾ full to allow the mango cupcakes to rise.
  9. Bake for 25 – 30 minutes.
  10. Let them cool.
