• 2 tablespoons chopped avocado** • 8 grape tomatoes** • 1 tablespoon chopped red onion** • 2 tablespoons chopped cucumber** • 1 cup romaine lettuce mixed with baby spinach* • 1-2 tablespoons crumbled feta cheese** • 6-8 cooked shrimp** • 1 hard-boiled egg, chopped For the lime and yogurt dressing: • 2 tablespoons plain Greek yogurt** • 1 tablespoon lime juice** • 1/4 teaspoon freshly squeezed lime zest** • Sea salt and pepper to taste** • 1 tablespoon extra virgin olive oil or avocado oil
*Preparation
- In a small glass bowl, whisk together all the dressing ingredients.
- Layer all the ingredients in order starting with the dressing at the bottom, then put the red onion, then the romaine lettuce mixture with baby spinach, continue with the grape tomatoes, add the cucumber, continue with the avocado pieces, then add the shrimp, the feta cheese and at the end the hard-boiled egg. At the end, seal with the lid.
