It is a good source of minerals, and adds a distinctive smoky flavor to foods that are grilled. Try this low-calorie mesquite soy salad. Makes 2 servings Prep: 15 minutes Cook: 10 minutes 3.5g fat 12.2g fiber 2.4g salt low GI Ingredients: 4 pieces of cooked and seasoned soybeans. 10 pieces of asparagus 2 sliced zucchini 1 green pepper, seeded and cut into cubes 6 spring onions 2 cups spinach leaves 3 tablespoons oil juice of 1⁄2 lemon drops of balsamic vinegar 3 tablespoons chopped fresh cilantro freshly ground black pepper. Preparation: 1 Preheat a large grill or nonstick skillet. It is important to wait for approximately 150 degrees before starting to cook. 2 Place the soybeans to heat in the pan and cook for 8-10 minutes, turning frequently. It is okay to roast them but do not allow them to burn. 3 While the soybeans are cooking, add the prepared vegetables and cook for 6-7 minutes, turning occasionally, until tender. Remove them when they are ready, and keep warm. 4 Mix the greens with the spinach leaves and lightly toss in 1 tablespoon of the dressing. Arrange on two plates. 5 Mix the soy and vegetables with the dressing. Drizzle with lemon juice, a little balsamic vinegar, cilantro, and black pepper. Serve hot.
