This Spanish-inspired omelet is loaded with nutrients. Preparation
- Lightly spray a medium-sized nonstick skillet with oil and place over medium heat. Cook green pepper, garlic, and scallions, stirring occasionally, for 5 minutes. Add the mushrooms and zucchini and cook for 5 minutes or until all the vegetables are tender.
- Meanwhile, beat the eggs, add the chives and season with salt and pepper. Pour the mixture into the pan and reduce the heat to low. Cook, over low heat, for about 10 minutes or until the omelet is set and golden brown around the sides and bottom. *3. Then, flip the preparation so that the top is on the bottom and cook for 2-3 minutes until that part of the omelet is cooked and golden. Serve hot or cold, cut into slices. This dish can also be eaten cold the next day. Place a portion of your omelet in a Tupperware container and take it to work. This way you will enjoy a delicious and healthy lunch.
