Sushi rolls with cauliflower “rice”
Turn sushi into one of your family's favorite dishes with this nutritious and exquisite recipe: Sushi rolls made with cauliflower “rice.”
Who said making sushi is difficult? You only need the ingredients and in a short time you will have super delicious and healthy sushi rolls, made with cauliflower “rice.” For this reason, they are perfect to enjoy with the family. Ingredients for sushi rolls: – Half a head of cauliflower – 1 tablespoon of rice vinegar – 1 teaspoon of sugar – 3-4 sheets of nori seaweed – Assorted vegetables, fruit and fish to fill (we used avocado and salmon, but you can add carrots, mango, tuna…). Preparation:
- To prepare the cauliflower rice, start by cutting the cauliflower in half and removing the central stem. Break it into smaller pieces.
- Place the cauliflower in a food processor and pulse several times until the cauliflower has a small, crumbly texture – be careful, not a paste.
- Place the cauliflower crumble in a microwave-safe bowl, cover with plastic wrap (poke a few holes to allow some steam to escape), and cook on high power for three minutes. Remove from microwave and uncover. Mix the sugar with the rice vinegar until the sugar begins to dissolve and pour that mixture into the cauliflower. Stir to combine and then let cool while you prepare the filling.
- Now, for the filling, cut the vegetables and fruits into thin sticks. Then cut the avocado and some thin slices of fish.
- Place a sheet of nori seaweed on a bamboo mat to make sushi. Spread the cauliflower rice on the seaweed (only covering 2/3 of the sheet).
- Add the filling to the end of the nori sheet, where the rice reaches the edge. Place it in a thin row and try to n or add too much filling as it will make it harder to roll.
- Now you are ready to start rolling your sushi. Start rolling by pulling the mat lightly and inserting the row of filling into the first full roll, pressing well so that it is compacted. Stretch the mat at one end while you roll the preparation, applying pressure so that the sushi is compact.
- With a clean, sharp knife, cut the sushi into pieces (I recommend moistening the knife a little, this makes it easier to cut the sushi). This preparation will make three to four sushi rolls, depending on how much you fill them. Now, enjoy your sushi rolls!
