Sweet Potato and Portobello Tacos

Do you like tacos? Did you know that mushrooms are loaded with vitamins? And that sweet potatoes are excellent for the heart and for losing weight?

Did you know that sweet potatoes are excellent for our heart, our circulatory system and for losing weight? And did you know that Portobello mushrooms are loaded with vitamins, proteins and fiber, which makes them perfect for controlling our weight? Now, imagine them wrapped in a tortilla, with lemon and pico de gallo. Do you crave them? Dare to innovate in your kitchen with these super nutritious tacos, made with selected ingredients to take care of your health.

Ingredients

8 tortillas** 550 g sweet potato, peeled and cut into cubes** 2 Portobello mushrooms* 1/3 cup raw cashew nuts** Cilantro** Jalapeño peppers, cut into thin slices** Lemon** Salt and black pepper to taste Spice mix: 1 tablespoon paprika* 1 tablespoon cinnamon 1/2 teaspoon ginger powder** 1 teaspoon cumin powder** 1/2 teaspoon fine sea salt** 1/4 teaspoon vanilla powder** 1/4 teaspoon cayenne pepper Pico de gallo: 1 chopped tomato* 1/4 cup chopped cucumber** 1/4 cup raw corn kernels 10 sprigs cilantro, finely chopped** 1/4 cup red onion, finely chopped** 1/4 cup red bell pepper, finely chopped** 1 clove garlic, crushed** 1 teaspoon dried oregano** 1/2 teaspoon coarse sea salt** Black pepper to taste

Preparation

  1. Preheat your oven to 220ºC.
  2. Turn on the grill (if you don’t have one, you can grill the mushrooms in a skillet over high heat).
  3. Prepare the pico de gallo by combining all the ingredients in a bowl.
  4. Place the container in the refrigerator while you prepare the rest of the meal.
  5. Mix the spices in a small bowl.
  6. Place the sweet potato cubes in a large bowl and sprinkle with 1 tablespoon of the prepared spice mixture.
  7. Toss the sweet potatoes in the bowl to make sure they are well coated with the spices.
  8. Spread the sweet potatoes on a large baking sheet lined with parchment paper.
  9. Place the tray in the oven for 25 minutes.
  10. While the sweet potatoes are baking, season the Portobello mushrooms with sea salt and black pepper and place on the grill.
  11. Grill for 3-4 minutes on each side or until cooked through and slightly charred on the edges.
  12. Remove the mushrooms from the heat and cut them.
  13. Toast the cashews for a couple of minutes in a dry skillet over high heat, always stirring them so they don’t burn. *14. Prepare your tacos and enjoy!
