How to prepare a low-calorie English breakfast

But remember that if you want to serve it with toasted whole wheat bread, you will add 58kcal for each slice – and that’s without spreading any low-fat butter, jelly or jam Ingredients 2 tomatoes, cut in half 2 slices of turkey ham Spray oil 150 g Mushrooms 2 medium eggs Freshly ground black pepper 2 teaspoons tomato sauce (optional) Preparation: Preheat the grill and place the tomato halves, one cut on one side, and the slices of turkey ham in the pan. Season the tomatoes lightly with black pepper. Roast for 5 minutes, turning the turkey slices more than halfway through the cooking time. When everything is cooked, turn off the grill and keep warm. Meanwhile, lightly drizzle the oil into a nonstick frying pan and place over medium heat. Add the mushrooms and cook on both sides until golden brown. Remove and keep warm. Carefully crack the eggs into the nonstick skillet and cook until the whites are set and the yolks are still soft. Divide between the two warm serving plates, then season, if desired, with black pepper and serve with the tomato sauce or ketchup. Variations • You can scramble the eggs instead of frying them. To accentuate the flavor, try adding a couple of chopped onions. • You can use a teaspoon of sa lsa brown or a touch of Worcestershire sauce instead of tomato sauce. Tip Vegetarians can enjoy this classic breakfast, too, by substituting slices of Quorn bacon for the turkey ham slices.
